How to cook potato and egg plant curry in mustard oil

 


Egg plant and potatoes in mustard oil we have to cook both together.

To make recipe First peel of all the potatoes and egg plants and then Roast  in mustard oil initially till brown.

Now put all the dry spices and stir well add ginger garlic paste one plus half spoon.

At 3 spoon tomato paste install well the curry

Add little water and cook for 10 to 15 minutes

Check the tenderness of potatoes and egg plant

by pricking with knife .

Garnish with cilantro and green chillies
