Peel all the skin from a peeler.Now cut horizontal slices.Take two sliced onion and fry them with 3 tsp of edible oil in an ordinary flame.Always use pressure cooker to avoid greasy and oily frying.Pressure cooker save time and this cooking need minimum oil,much work is completed by steam.
Take 5 cloves of garlic,one piece of ginger and make ginger garlic paste and then mix with onions.Now add 1 tsp salt,1/2 tsp turmeric powder, 2 tsp coriander powder and 1/2 tsp of red chillies powder.After mixing all ingredients put the gravy on light flame for 3 minutes.Add little water so that gravy should not stuck with the bottom.Now add 3 tomatoes deeply sliced and put them in gravy .After cooking 5 minute add all sliced gourds and closed the lid of pressure cooker.Cook the recipe for 25 minutes on medium flame.It is important to note that we should add little or no water prior to closing of lid because gourds are hydrated enough to leave water when cooked.After 25 minutes ,open the lid and stir with the big spoon evenly on each corner so that the stucked material should mix.Then add 3 green chillies for garnishing and mix.Leave the gravy for 3 to 5 minutes so that the oil should be well separated.When gravy leave the oil, stop the flame and serve.Similarly you can make ridge gourd tomato sabji by adding more tomatoes.Other famous recipe is ridge gourd skin chutney.You can serve the gravy with parathas,poori,plain rice,jeera pulao,and ghee rice.
