Stuffed karela is a most delicious recipe in India and Pakistan due to its very unique taste that overwhelmed the bitterness of karela.In this recipe effort has been made to make it more delicious in a unique way. INGREDIENTS.
1. Karella... 5 to 6 only medium size.

2.Tamarind juice- one bowl.

3.Molasses or GUR. Single piece 10 grams 4.Onions- Medium size 3 finely chopped for filling and a small for gravy.
Tomatoes- 5 medium size.
5.fenugreek seeds- Two spoons.
6.kalonji(black seed or black cumin) -1 spoon 7.Turmeric-1spoon. 8. Red chilli powder- 1 spoon. 10.salt-1 spoon. METHOD... Take fresh bitter gourds from market and remove their skin with a peeler.

Now make a vertical cut on a single side and remove all the seeds til it became hollow.Repeat the process to all 6 karela.Now rub gently outside and inside portion with a piece of molasses or gur and then repeat the same process with tamarind to all Six and place them in open air for 20 minutes.This process will remove bitterness from gourds.Remember not to wash karella with water prior to this process.After 20 minutes wash all karella gently to remove all molasses and tamarind. FILLING.. Take finely chopped onions in frying pan and fry in edible oil.only 3 spoons of oil are sufficient.Add fenugreek seeds and with turmeric,chillies and salt.
You can also add garam masala according to taste. Now fill all the karellas with filing and wrap with a household thread.Now fry all karelas in a frying pan til appear Brown
GRAVY.... To make gravy first you have to make tomato juice in a blender.Now take a single onion roughly chopped and fry in 2 spoons of edible oil .Add 1 spoon of garlic paste and all fried karellas.Now pour all tomato juice and tamarind juice over karella.Also add 3 green chillies and molasses or gur in one piece or 6 to 10 grams only.Then add 1 spoon of kalonji(black seeds or black cumin)and place the entire mixture on low flame. Remove from flam afterward and dish out.
