Kidney beans curry is very common.Kidney beans are a rich source of potassium,it satisfy the hunger and help diabetics to achieve their potassium level,where they cannot get banana for rapid spikes in blood sugars.The recipe is very simple.Kidneys beans are available as red and white beans.I like white beans ,you can prefer according to your own choice.First took 300 to 400 gms of beans and soaked them in water for 4 to 5 hours.

 Now take 2 sliced onions and Brown in 3 tsf of edible oil.take 5 cloves of garlic and crush now add crushed garlic in the onions brown already.Keep gas flame at medium. Now add a little water in the mixture and add dry spices,1.5 tsp salt,1 tsf red chillies powder, 1/2 tsp turmeric powder and 2 tsf coriander powder.Add half cup water and cook for 5 minuts.Now add 3 sliced tomatoes and cook for 5 minutes. Now add soaked beans ,add 2.5 glass water in mixture.Use pressure cooker for recipe,like pressure cooker butter beans.

Close the lid and place the pressure cooker in medium flame for 25 minutes .After this time remove the pressure and open the lid.You will observe almost little water still.Now take half cup tamarind juice in the mixture.unlike tamarind lemonade,only make tamarind paste.

Add 3 green chillies.Now cook the mixture on light flame for 10 minutes .Now stop the flam and serve.To make mochi with red beans follow the same for beans.

To make bitter gourd recipe , always purchase fresh gourds from market.First  peel all the skin prior to washing and sprinkle some salt,following the same method as in given vidio.Now place all gourds in sunlight for some time.Now  wash them with water.By this process ,bitterness of karela reduced considerably.Now  sliced 3 onions and fry them with 3 tsp  of edible oil.Now crush three cloves of garlic and put them in fried onion.Now  add all dry spices,including 1 tsp salt,1/2 tsp of turmeric,1/2 tsf red chillies powder and 2 tsp turmeric powder. Now add 3 sliced tomatoes and cook for 5 to 10 minutes.After that  add all bitter gourds and 1 glass of water and closed the pressure cooker.Boil the mixture for 20 minutes .Then  open the lid of cooker and fry the karella on slow flame til bitterness gone.Now  add 3 green chillies.Now  taste the recipe for bitterness if gone completely,then serve.

There are three substances inside fruit name,charantine,vicine and a polypeptide(having insulin like structure) which supposed to have blood glucose lowering effect.The edible fruit  has plenty of vitamin and minerals.It is widely distributed in South America,Asia,Africa and along Carabean.It has a specific protein called as Lectin that has glucose binding property.Lectin reduces blood glucose by acting on peripheral tissues and thus suppressing the appetite.The action is similar to  insulin on brain.    A report published in the journal of ethnopharmacology in January 2011 revealed,significant drop in blood glucose of type 2 diabetic patients.Dose of 2000 mg/day was given for 4 weeks in a clinical trial.Result was significant as compared to placebo.Another report published by issue of Chemistry and Biology described that bitter gourd increased the cellular uptake of glucose and also improved glucose tolerance.                                                                                                                                                                                                                                                  HOW TO USE.....                                                                                                                                                                                                                                                   Bitter gourd can be use as raw or in recipes.
